I like salad and it’s a good thing because I also LOVE chocolate cake, lemon pie and Twizzlers. After a weekend of summertime comfort food I’m looking forward to tonight’s fresh and easy salad.
Easy Summer Salad Recipe
Tonight’s salad is inspired by a Better Homes and Gardens recipe for Spring Greens and Roasted Chicken. I’ve simplified it using what I had in the fridge and a few ingredients I found at Aldi’s over the weekend. Here’s my version: (You can adjust amounts depending on servings needed.)

Salad
Roasted chicken (I’m using leftover rotisserie chicken)
Mixed greens
Fresh strawberries, chopped
Feta cheese
Mixed nuts
Salt and Pepper to taste
Strawberry-Balsamic Vinaigrette
1 1/2 cups strawberry preserves
1/4 cup balsamic vinegar
1/4 cup olive oil
1/4 t. crushed rosemary (I have lots of fresh rosemary but you can use dried)
Salt and pepper to taste
