Week’s Menu #4 ~ October 8 – October 14

Well, hello October! When did you get here? You know you’re my favorite, right? August is wild with all that back to school hoopla, and September, well she’s just crazy. But, you, October.  You’re that perfect in between time with your cool, misty mornings and pumpkin spice candles. I think we’re all glad to see you!

Noble Street

Celebrating fall around here means less screen time, more lingering over coffee and a good book, and lots of breezes through open windows.  But all my people still insist on eating so here’s this week’s better-late-than-never-menu. (I’ve learned that certain teenagers do actually read my blog because I’ve heard them talking about what’s on the menu. They’re a fun bunch to cook for!)

Thursday, October 8

Oven Roasted Chicken + Green Peas

I buy the 10lb. bag of leg quarters when they’re on sale for $0.59lb and divide them into gallon bags so I can freeze what I won’t use in one meal.  To roast: Preheat oven to 375 bake. Line a large sheet pan with foil. Lightly drizzle each piece with olive oil and sprinkle with your favorite seasoning. Bake for one hour. Larger leg quarters may need an extra 20-30 minutes.

Friday, October 9

Maddie’s Asian Pasta and Vegetables + Egg Rolls

She doesn’t have a recipe. Makes it up as she goes. It’s delicious.

Saturday, October 10

Steak + Asparagus + Roasted Sweet and White Potatoes with Rosemary + Cupcakes

We only have steak on special occasions around here and the special occasion tonight is Eric’s birthday. Tomorrow is the day he catches up with me! I’m exactly six months older than him.

Sunday, October 11

Lunch:

Italian Sausage-Bean Stew + French Bread

This is a new recipe for me. I’ll let you know how it turns out.

Dinner:

Garlic Herb Roasted Shrimp + Tossed salad

This is delicious!! The recipe you’ll find in the link includes homemade cocktail sauce. I use store bought.

Crockpot Buffalo Chicken Sandwiches + Chips

Tuesday, October 13

Hot dogs + french fries

I LOVE hot dogs!!

Wednesday, October 14

Kids eat at church. We enjoy leftovers!

The Blueberry Pie Bars I shared back in September were delicious! I’d not made those before but they were a hit. It’s probably one of my new favorite recipes. I’m thinking of trying it with strawberries or peaches. I’ll let you know.
